Parker House Rolls

3 cups all-purpose flour
1 pkg. active dry yeast
6 tablespoons sugar
3/4 cup milk
1/3 cup butter
1/2 teaspoon salt
2 eggs
vegetable cooking spray


Combine l l/2 cups flour, yeast, and sugar. Combine milk, butter and salt in a saucepan; cook over medium heat til butter melts. Cool. Add liquid mixture to flour mixture. Add eggs; beat at low speed 30 seconds. Increase speed to high, beat 3 minutes. Stir in remaining l l/2 cups flour to make a stiff dough. Turn dough onto lightly floured surface. Knead til smooth and elastic. Shape into a ball, place in a bowl coated with cooking spray, turning to grease the top. Cover and let rise til doubled in bulk.

Punch dough down, cover and let rest 10 minutes. Roll dough to 1/4 thickness, cut with a 2 inch biscuit cutter. Make a crease across each circle, and fold one half over. Press edges to seal. Place rolls on baking sheets, coated with cooking spray. Cover and let rise in a warm place, til doubled in bulk.

Bake at 375 for 15 to 20 minutes, or until lightly browned.
