HERBED SCONES
1-3/4 cup all purpose flour
4 tsp. baking powder
1 Tbsp. sugar
1 Tbsp. chopped fresh chives or green onion
1 Tbsp. chopped fresh parsley
3/4 tsp. salt
1/2 tsp. dried thyme
1/4 cup cold butter, cut in chunks
1 cup low-fat plain yogurt
Preheat oven to 425 degrees. Flour a baking sheet.
In a large bowl, mix together flour, baking powder, sugar, chives,
parsley, salt and thyme.
Using a pastry
blender, cut in butter until crumbly.
Using a fork, stir in yogurt. In bowl, knead about 5 times or until smooth.
On lightly floured surface, roll out to
1" thickness. Using a 2" round cutter, cut out scones and
place on prepared baking sheet.
Bake for 10 to 12 minutes or until lightly browned.
Makes about 12 scones.
