Pikelets (Scones)
1 cup self-raising flour
2 tbs castor sugar
1 tsp grated lemon rind
1 egg, lightly beaten
1/3 cup sour cream
1/4 cup milk
Sift flour into mixing bowl. Stir in sugar and rind.
Add egg, cream and milk. Beat until mixture is lump-free.
Brush a non-stick fry pan with oil. Heat until warm.
Drop a tablespoon of batter in. Cook 2 minutes or until golden; turn and cook until other side is golden.
Makes 16 small or 8 larger pikelets.
