Mom's Raisin Scones

1 cup butter
1 cup brown sugar
1 egg
1/2 cup milk
3 cups flour
2 teaspoons baking powder
1 cup raisins



Preheat oven to 400.

Cream butter and sugar, then mix in egg, then milk.

Mix in dry ingredients and raisins and spread on a cookie sheet.

Bake for about 20 minutes or until no longer wet in middle.

They have a tendency to overcook around edges, so depending on your oven, you may want to lower temperature.

This makes enough for about sixteen scones way I cut them: about half a large cookie sheet, or a whole small one.




Urban Peasant Scones

2 cups flour
1 tsp salt
1 Tbsp baking powder
1 Tbsp sugar
1/2 cup plain yogurt


Preheat oven to 425.

Mix together dry ingredients.

Add yogurt and mix gently to form a soft dough.

Roll out on a floured board to about a quarter inch in thickness, cut in to circles.

Place on a lightly-greased baking sheet and bake until lightly browned on top (about 10 min.).





Sweet Milk Scones

2-3 cups unbleached flour
1 teaspoon baking soda
2 teaspoons cream of tartar
Salt to taste
4 tablespoons (1/2 stick) butter
3/4 cup milk


Preheat oven to 450.

Lightly grease a baking sheet and set aside.

Sift together flour, soda, cream of tartar, and salt.

Using a pastry blender or your hands, cut in butter (or pulse in food processor) until mixture looks grainy, like coarse crumbs.

Pour milk in a well in center, and mix until a soft elastic dough is formed. (If using a food processor, be very careful not to overmix, as this produces a tough scone.)

Knead dough lightly on a floured surface until smooth, and press with hands or roll dough into a pad about 3/4 inch thick. (If dough is rolled too thin, scones won't rise properly.)

Cut into 21/2 or 3 inch rounds with a glass or a cookie cutter (or cut into wedges) and bake on prepared sheet for about 10 minutes or until they rise and are golden.

Yield: 8 scones.



Sweet Variations: Treacle Scones

Prepare basic recipe for Sweet Milk Scone.

Mix 2 tablespoons molasses into milk before adding it to flour.

Add 1/2 cup chopped walnuts to dough before rolling.


Sweet Variations: Honey Scones

Prepare basic recipe for Sweet Milk Scone.

Substitute 1/4 cup orange juice and 1/2 cup milk for 3/4 cup milk add 2 tablespoons honey grated zest of 1 lemon 1 tablespoon chopped walnuts to dough before rolling it out.


Sweet Variations Jam Scones

Make basic dough for Sweet Milk Scones and divide it in two.

Roll out both pieces to 1/2 inch thickness, and form each into a large round or rectangle.

Brush edges of one piece with a beaten egg or with milk, and spread 2 tablespoons fruit jam to within an inch of edge.

Put other piece of dough on top, and press lightly around edges to secure sandwich.

Lightly score top into squares, cutting only partway through; brush top with beaten egg, and bake as above.


Savory Variation: Cheese Scones

Add 1 generous cup of grated cheese to basic dough before rolling it out.

Cheddar is a particularly good choice. Bake as usual.
