Banana Bread Surprise Muffins

1/3 cup shortening
1 cup sugar
2 eggs
1/2 cup sourdough starter
1 cup mashed bananas
11/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
cup chopped nuts
chocolate chips
jam and/or jelly


Paper 3 muffin tins and set aside. Preheat the oven to 350o.

In a large bowl, cream the shortening and sugar together. Beat in the eggs until blended. Next stir in the sourdough starter and the bananas and set them aside. In a medium bowl, stir together the flour, baking powder, baking soda and salt. Stir the dry ingredients into the sourdough mixture until just blended.

Fill 1 muffin cups with a different color cup 3/4 full. Fill remaining muffin cups about 3/8 full and add surprise center. Fill muffin cups to about 3/8 full. Bake for 20 minutes, or until a wooden toothpick stuck in the middle of different color cup comes out clean. Cool and serve warm or cold.
