Sourdough: Cornbread

Cornbread

3/4 cup cornmeal
3/4 cup flour
3/4 tsp baking soda
1/2 tsp salt
2 Tbsp sugar
2 eggs
1 cup sourdough starter
1 cup evaporated milk
1/4 cup butter, or vegetable oil


Grease an 11x171/2 inch baking pan. Preheat the oven to 450o.

In a large bowl, combine the cornmeal, flour, baking soda, salt and sugar then set aside. In a medium bowl, beat the eggs and stir in the sourdough starter, milk, and butter. Stir these into the dry ingredients until just blended. Pour into the prepared pan and bake for 20 to 25 minutes, or until a wooden toothpick inserted in the middle comes out clean. Serve warm.
