Sourdough: Dinner Rolls

Dinner Rolls

1/2 cup milk
1 pkg dry yeast
1 egg
1 cup sourdough mixture
2 Tbsp sugar
1 tsp salt
3 Tbsp butter
3 to 4 cups of flour


In a small saucepan, scald the milk. Let milk cool until warm to the touch.

When cooled proof the yeast. In a large bowl, beat the egg, then add the sourdough starter, sugar, salt, butter and proofed the yeast. Add 2 cups of flour and beat until smooth. Stir in enough of the remaining flour to make a soft dough. Turn out the dough onto a lightly floured surface. Clean and grease the bowl and set it aside.

Knead the dough for 5 to 8 minutes, until it is smooth and elastic. Add more flour as needed. Place the dough into the greased bowl and turn to cover completely. Cover with a cloth and set aside to rise until double.

Grease a large baking sheet and set it aside. When dough has doubled, punch it down and divide into 24 pieces. Shape each piece into rolls. Place them on the baking sheet and cover with a damp cloth and let rise until doubled again. Bake for 20 minutes in an oven that was preheated to 400o. Cool on a wire rack.
