Sourdough Bread

1 cup sourdough starter
1 pkg active dry yeast
11/2 cup warm water
51/2 to 6 cups flour
2 tsp salt
2 tsp sugar
1/2 tsp baking soda


Bring sourdough starter to room temperature.

In large bowl dissolve yeast in water. Stir in 21/2 cup flour, salt, sugar, and sourdough starter. Combine 21/2 cups flour and baking soda. Stir into sourdough mixture. Stir in as much remaining flour as you can mix in with spoon. Turn out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic. Shape into a ball in greased bowl, turning once to coat.

Cover and let rise in warm place until doubled (1 to 11/2 hours).

Punch down and divide in half. Cover, let rest 10 minutes. Shape each half into a 6 inch round or 9x4 inch oblong loaf on greased baking sheet. With sharp knife, make crisscross slashes across tops. Cover, and let rise until nearly double (about 1 hour). Bake in 400F oven for 35 to 40 minutes. Remove from baking sheet, and cool on wire rack.
