Corn Spoon Bread
2 c. milk
1/2 c. cornmeal
1 tsp. salt
1/2 tsp. baking powder
2 Tbsp. butter
1 can cream-style corn
4 eggs, separated
1 tsp. sugar
Preheat oven to 375° F and grease a 2-qt. casserole.
Scald milk. Add cornmeal and cook until thickened. Add salt, sugar, butter, baking powder and corn. Mix well.
Beat egg whites until soft peaks. Fold into corn mixture.
Pour into greased 2 quart casserole. Bake at 375 degrees for 25 to 30 minutes.
