Stuffing/Dressing: Cornbread Dressing

Cornbread Dressing
(10 to 12 servings)

4 cups Breadcrumbs..(can use Herb seasoned bread stuffing mix like Pepperidge Farm)
4 cups Cornbread (adding 3 eggs to the recipe you use)
1/2 cup chopped onion
1 cup chopped celery
1 teaspoon sage
Salt and pepper to taste
3 cups hot chicken or turkey broth
1 cup milk
1 stick butter


Melt butter and add celery and onion and saute until the celery and onions are soft but not brown.

Crumble the cornbread in a large bowl. Add the bread crumbs and the celery and onions.. Add seasonings.
Pour the hot broth over all and mix well. Add the milk. Mixture should be very soft to allow for loss of moisture during baking. Add more hot broth if necessary.

Spoon into an oblong baking dish and bake at 350 degrees for about 45 minutes to 1 hour or until browned.
