Stuffing/Dressing: Mom's Turkey Stuffing

Mom’s Turkey Stuffing (adapted by my sister)

3 pounds potatoes
1 1/2 pounds onion
1/2 loaf white bread
1/4 cup chicken broth (mom used water)
1/4 teaspoon each salt, celery salt, pepper, summer savory*


Peel and boil the potatoes. When fork tender place in a large bowl and mash just until the consistency of small lumps, add coarsely chopped onion, the bread torn in small pieces and the spices. Add the chicken broth and mix until the stuffing holds together like a good pie pastry dough (not sticky or crumbly you may add more bread if needed). The fun part starts now, taste it and start adding more of the above spices you feel are needed, a little at a time. (It is better to start with a little less then you think you need as the cooking brings out the flavors) *Make sure you used *summer* savory as the winter makes the stuffing taste bitter.
