Egg Bread Dressing

Egg Bread:
2 cups cornmeal
1 tsp. Baking soda
1 tsp. Salt
2 cups buttermilk
3 eggs
3 Tblsp. Melted shortening or bacon grease
3 tsp. Baking powder

Dressing:
1 recipe of Egg Bread (above)
3 cups chicken broth
3 cups chopped celery
3 Tblsp. Chopped parsley
1 cup chopped onion
1/2 tsp. Each salt and pepper
2 Tblsp. Bacon grease
4 Tblsp. butter, melted
8-10 slices bread


Preheat oven to 400 degrees F.

For Egg Bread: Sift meal, salt, and baking powder together. Beat eggs, buttermilk, melted shortening, and meal mixture. Stir until smooth. Add soda that has been dissolved in 1 Tblsp. cold water. Pour into hot greased 10-inch cast iron skillet. Bake 20-25 minutes or until done.

For dressing:

Saute celery and onion in fat until softened. Mix together all ingredients and let stand for 1 hour. Bake at 350 degrees F. for 1 hour in a butter 13- x 9-inch pan.
