Stuffing Balls

2 tbsp. Hard margarine (or butter
3/4 cup chopped onion
1/2 cup choped celery
2 Large eggs, fork-beaten
1 cup Frozen kernel corn
1 cup milk
3 cups Dry bread crumbs
1 1/2 tsp. Poultry seasoning
1 1/2 tsp. Parsley flakes
3/4 tsp. salt
1/4 tsp. pepper
1/4 cup Hard margarine (or butter), melted


Preheat oven to 350 degrees F.

Melt first amount of margarine in non-stick frying pan, Add onion and celery. Saute until soft.

Combine next 8 ingredients in large bowl. Add onion and celery. Mix well. Shape into 14 balls using 1/4 cup for each one. Add water if needed to hold together. Arrange in a small greased roaster or baking dish large enough to hold in a single layer.

Drizzle second amount of margarine over top. Cover. Bake in 350 degree oven for about 35 minutes.

Makes about 14 stuffing balls

Note: Especially handy for freezing ahead. Simply heat as few or as many as needed.
