Almond Bread
8 oz. (225g) Almonds*
4 oz. ( 110g) Plain Flour
4 oz. (110g) Caster (Superfine) Sugar
4 Egg Whites
Beat egg whites ‘till very stiff. Add caster sugar – beat. Fold in sifted flour and almonds. Spoon into small oblong loaf pan and bake at 180ºC (360ºF) for 45 minutes. Allow to cool in pan.
Wrap in foil and leave for 48 hours. Slice very thin, spread on wire rack and dry in moderate oven. Watch carefully.
* Can use other nuts, ie: Pecans, Walnuts, Peanuts, or a mixture of nuts. Macadamia Nuts are beautiful but difficult to slice.
