4 cups baking apples, peeled & diced
1 cup finely chopped pecans
2 cups sugar
3 cups flour
2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. allspice
1/4 tsp. cinnamon
2 sticks butter, melted
2 eggs, slightly beaten
2 tsp. vanilla
Preheat oven to 325°. Butter & flour two 9" loaf pans.
In a large bowl, combine the apples, pecans and sugar and stir well. Mix the flour with the soda, salt, spices and butter; add to the apple mixture. Combine the eggs and vanilla and add to the batter. Mix well.
Pour into the prepared pans. Bake 1 hour or until a wooden pick inserted near the center of the loaf comes out clean. Cool in the pans 10 minutes, then turn out onto a rack.
