Babka
Dough:
1 envelope yeast
4 1/2 cups cake flour
1/2 cup sugar
1/2 cup butter
1 1/4 cups milk
2 eggs
Filling:
3 tsp cinnamon
1/2 cup sugar
extra butter melted to brush dough
raisins (optional)
Mix Flour, sugar and yeast in a bowl. Warm milk and butter till warm.
Add to flour. Add two eggs. Mix until a smooth dough.
Knead for 10 minutes in a mixmaster
or 2 minutes in a Magimix.
Oil a large bowl and place mixture in. Cover with a cloth and leave to
rise till doubled in size.
Punch down and roll into a large triangle.
Spread with melted butter and sprinkle with cinnamon sugar. Roll up like
a swiss roll and fold in half and twist two rolls together.
Place in a greased extra long or two smallloaf pans.
Cover and leave to rise again till dough comes to the top of the pan.
Brush with egg and sprinkle with more cinnamon sugar.
Bake in a 180 (375) oven for approx 25 minutes, or till golden brown.
Remove from pan and allow to cool.
