MOIST BABY FOOD NUT BREAD
3-1/3 cups all-purpose flour
3 cups sugar
2 tsp. Baking soda
1 tsp. Salt
1 tsp. Ground cinnamon
4 eggs
2 jars (6 oz. Each) strained apricot baby food
1 cup vegetable oil
2/3 cup water
1 Tblsp. Vanilla extract
1 cup chopped walnuts
DIRECTIONS:
Preheat oven to 350.
In a large bowl, combine dry ingredients.
In another bowl, combine
eggs, baby food, oil, water, and vanilla.
Stir into dry ingredients; mix
until well blended.
Stir in nuts. Pour into two greased 9-x-5-x-3 inch loaf pans.
Bake for 50
to 60 minutes or until a toothpick inserted near the center comes out
clean.
Cool in pans for 15 minutes before removing to a wire rack to cool
completely.
Yield: 2 loaves.
