Banana Apricot Nut Bread

2 cups flour, unsifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
3/4 cup dried apricots, chopped (or substitute dried cranberries)
3/4 cup walnuts, chopped
1 cup bananas, about 2 or 3
1/2 cup milk
1 egg
1/4 cup butter or margarine


Preheat oven to 350° F and grease an 8” loaf pan.

In bowl stir together flour, baking powder, baking soda, salt, sugar, apricots, and nuts.

Combine bananas, milk, eggs, and butter. Stir into dry ingredients just until blended.

Pour batter into prepared pan.

Bake for 1 hour and 15 minutes or until wood tooth pick inserted in center comes out clean.
