Banana Nut Bread Recipe

1/3 cup butter or margarine
2/3 cup sugar
1/2 teaspoon grated lemon peel
2 eggs, beaten
1 1/2 cups mashed ripe bananas (about 3 medium size)
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup coarsely chopped walnuts or pecans

Preheat oven to 350 degrees.

Cream butter and sugar in large bowl until light and fluffy; stir in lemon peel.

Stir in eggs and bananas.

Combine flour, baking powder, and salt and add to banana mixture slowly; stir until just moistened.

Fold in nuts.

Grease and flour mini loaf pan set.

Pour scant 1/2 cup of batter into each pan.

Bake for 30 to 35 minutes or until wooden pcik inserted in center comes out clean.

Yields 6 - 8 mini loaves.

Cool on rack. Glaze or decorate.

Brown Sugar Glaze
3 tablespoons butter or margarine
1/3 cup brown sugar
3 tablespoons whipping cream
1/2 teaspoon vanilla

Combine butter, sugar, and cream in saucepan. Bring to a boil over medium heat. Let boil 1 minute.

Remove from heat; stir in vanilla. Spoon or pour over cooled loaves.
