Banana Wheat Bread
Makes 1 - 9 x 5 inch loaf (12 servings).
2 cups whole wheat flour
1/4 cup wheat germ
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups mashed bananas, around 4 1/2 medium (*use very ripe ones) - can use a little more if desired.
1/4 cup vegetable oil
1/2 cup honey
1 teaspoon vanilla extract
1/3 - 1/2 chopped nuts (*pecans* or walnuts)
Grease a 9 x 5 inch loaf pan. Preheat oven to 350F (175C) and 325F for dark pans.
Combine oil, honey, eggs, vanilla, and mashed bananas in a bowl.
In a large bowl, whisk together flour, wheat germ, salt, and baking soda. Make a well in dry ingredients, and add the banana mixture. Mix together until dry ingredients are moistened. Stir in nuts. Pour batter into prepared pan.
Bake 1 hour in middle of oven. Test for doneness, and cool on wire rack.
Fat per serving (from 12 servings): Approx. 7.5 gr fat with 1/3 cup walnuts, 8.5 gr with 1/2 cup. Approx 8 gr fat with 1/3 cup pecans, 9 gr with 1/2 cup.
