CARROT BREAD 
1 c. corn oil 
1 c. sugar 
1 Tbsp. vanilla 
2 eggs 
1 1/2 c. sifted flour 
1 tsp. soda 
1/4 tsp. salt 
1 Tbsp. cinnamon 
1 c. grated carrots 
1/2 c. chopped pecans 
Preheat oven to 325.
Pour oil, sugar and vanilla in a large bowl. Beat at medium speed until well blended.
Add eggs and continue to beat at medium speed for 2 more minutes. 
Sift flour with soda, salt and cinnamon. Add flour mixture to egg mixture
 and beat until completely blended. 
Fold in grated carrots and nuts and bake for 1 hour .
 Allow to cool 
completely for better slicing. Makes one large loaf or two medium loaves.
