Cherry Eggnog Bread

1 1/4 cups eggnog
1 egg, beaten
1/3 cup vegetable oil
2 1/2 cups flour
3/4 cups sugar
1 Tbsp baking powder
1/2 tsp salt
1/2 cup chopped pecans
1/2 cup chopped maraschino cherries


Preheat oven to 350 degrees.

Mix together eggnog, beaten egg and oil. Stir in flour, sugar, baking powder and salt. Fold in pecans and cherries. Spread into 2 (8 x 4-inch) bread pans that have been greased and floured. Bake for 45 min. or until test done. Cool 10 min.; turn out on racks to finish cooling.


Frosting Recipe:
1/3 cup butter
2 cup0s confectioners sugar
1 1/2 tsp vanilla
1 to 4 Tbsp. hot water
Pecan halves, for garnish
Maraschino cherries for garnish


In a 1 quart saucepan, melt butter. Blend in confectioners sugar and vanilla. Stir in 1 Tbsp hot water at a time, not using more then 4 Tbsp total. Add only enough hot water to make a nice spreading consistency. Spread over top of both cooled loaves. Decorate top with additional cherries and pecans, if desired
