CHRISTMAS EGGNOG LOAF

2 eggs 
1 cup white sugar 
1 cup eggnog ( Fresh in the carton ) 
1/2 cup butter or margarine 
2 teaspoons rum extract 
1 teaspoon vanilla extract 
2 1/4 cups all-purpose flour 
1/2 teaspoon salt 
2 teaspoons baking powder 
1/4 teaspoon ground nutmeg 
Method: 
Preheat oven to 350 degrees. 
Grease the bottom only of 9x5 inch loaf pan.
 Beat the eggs in 
large bowl and add the sugar, eggnog, butter, rum extract and vanilla; blend well. 
Spoon flour into a measuring cup and level it off. Add the flour, 
baking powder, salt and nutmeg, stirring just until dry ingredients are
 moistened. 
Pour into greased pan. Bake for 40 minutes to 1 hour or until tooth 
pick inserted in center comes out clean.
Cool for about 10 minutes before you remove from pan. 
Cool completely and wrap tightly. Store in the refrigerator.
