Cinnamon Swirl Quick Bread
Recipe By : Country Woman Magazine March / April 1997
1 1/2 sugar -- divided
1 tablespoon cinnamon
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 large egg
1/4 cup vegetable oil
Glaze Frosting:
1/4 cup confectioner's sugar
1 1/2 teaspoons milk (more if necessary)
Preheat oven to 350 degrees F. and grease the bottom only of a 9 x 5 x 3-inch loaf pan.
Combine 1/2 cup sugar and cinnamon; set aside. Combine flour, baking soda, salt and remaining sugar. Combine buttermilk , egg , oil ; stir into dry ingredients just until moistened.
Pour half the batter into the prepared pan . Sprinkle with half the cinnamon sugar. Carefully spread with remaining batter and sprinkle with the remaining sugar; swirl knife through the batter. Bake at 350 degrees for 45 to 50 minutes or when a toothpick inserted near center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely.
Combine glaze ingredients and drizzle over cooled bread.
