Gingerbread Loaf

Source: Pillsbury's "Christmas Baking":

1 cup firmly packed brown sugar
1 cup butter, softened
2 eggs
1 cup molasses
1 cup boiling water
1 tsp baking soda
2 3/4 cups flour
2 tsp baking powder
4 tsp ginger
2 tsp cinnamon
1 tsp allspice
1 tsp cloves
1/4 tsp salt


Preheat oven to 350F. Grease two 8 X 4" loaf pans.

In large bowl, beat together brown sugar and margarine until light and fluffy.

Add eggs, beating well.

In small bowl, combine molasses, water and baking soda, mixing well.

Beat into brown sugar mixture. Gradually add remainder of ingredients, mixing well.

Bake for 50-60 minutes, until toothpick inserted in center comes out clean.

Cool in pans on wire rack for 15 minutes before removing from pans to cool completely.

To make glaze:
Blend together 1/2 cup of powdered sugar and 1-2 tbsp of lemon juice until smooth and brush over loaves.

Wrap tightly and store in refrigerator.

** if baking ahead, freeze loaves unglazed.
