Hawaiian Sweet Bread

3 Tablespoons sugar
2 packages dry yeast
1/2 cup potato water (water from cooked potatoes)
1 cup mashed potatoes
1/8 teaspoon ground ginger
1/2 cup milk (scalded and cooled)
2 teaspoons salt
6 eggs
1 3/4 cups sugar
1/2 cup butter, melted
8 cups of flour


Add sugar, and yeast to potato water. Stir until dissolved. Blend in mashed potato and ginger. Set aside and let rise until doubled in bulk (about 5 or 10 minutes). Scald milk. Melt butter and set both aside to cool to luke warm.

Beat eggs. Add sugar gradually while continuing to beat. Stir in cooled butter.
Combine yeast to egg mixture. Blend. Stir in 2 cups of the flour, add milk, and beat.
Add two more cups of flour. Beat 5 minutes. Add remaining flour gradually, kneading when dough becomes too stiff to beat.

Turn out on floured board and knead 10 minutes, adding only enough flour to prevent sticking.
Place dough in oiled bowl, cover and let rise until doubled.

Divide into 4 portions and shape into round loaves and place on greased cookie sheet or place in 5 x7 inch oiled loaf pans. Allow to rise.
Brush with beaten egg. Bake in preheated oven 350 degrees for 40 to 50 minutes until browned
