OATMEAL SPICE WHOLE WHEAT BREAD
2 cup whole wheat flour, sifted
4 teaspoons baking powder
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
3/4 teaspoon salt
1/2 cup brown sugar
1 cup quick-cooking oatmeal
2 eggs, well-beaten
1/2 cup honey or molasses
1 cup milk
1/3 cup oil
1 teaspoon vanilla extract
Preheat oven to 350 °F.
Grease a large loaf pan, line the
bottom with waxed paper, then grease the waxed paper.
Sift dry ingredients together twice, then stir in brown sugar and
oatmeal.
Combine other ingredients separately. Make a well in the dry ingredients,
then pour in the other ingredients, stirring just enough to blend. (Do not
mix too much.)
Pour into loaf pan and bake for 45 to 50 minutes.
Turn out of pan to cool. Wrap in foil and store for 24 hours.
Serve sliced with butter or other spreads (such as cream cheese).
