Sweet Bread Portugese

PORTUGESE SWEET BREAD (PAO DOCE OR HAWAIIAN SWEET BREAD)

1/2 cup mashed potatoes;reserve water from boiling potatoes
1 1/2 Tablespoons sugar
2 packages yeast
1/4 Cup luke warm potato water(water the potatoes are cooked in)
1/4 teaspoon ginger
1/4 Cup milk (scalded and cooled)
1 teaspoon salt
3 eggs
3/4 Cup plus 2 Tablespoons sugar
1/4 cup butter melted
4 cups flour

Boil potatoes and reserve water. Mash potatoes and set aside.

Add sugar, yeast to potato water and stir until dissolved. Blend in potatoes and ginger.

Set aside and let rise until doubled in bulk (5-10 minutes).

Melt butter; scald milk and cool. Beat eggs.

Add sugar gradually while continuing to beat. Stir in cooled butter.

Combine yeast mixture to egg mixture.

Stir in 1 cup of the flour; add milk and beat.

Add one more cup of flour and beat 5 minutes longer.

Add remaining flour gradually-- kneading when dough becomes too stiff.

Knead 10 minutes, adding only enough flour to keep from sticking.

Place dough in an oiled bowl, cover and let rise. Divide into 2 portions, shape into round loaves and place on cookie sheet or use oiled loaf pans.

Allow to rise until doubled.

Brush with beaten egg.

Bake 350 degrees for 35 to 40 minutes until browned.
