Sweet Bread Pritikin Style Fruit Loaf

Pritikin-style fruit loaf

Makes about 12 slices
Preheat oven to 180*C ( 350*F )
Grease and flour a 20cm ( 8" ) loaf cake pan

Ingredients:
25 dried apricots
10 dried figs
10 dried prunes
5 dried pears, halved
2 cups water
1 large, or 2 small bananas, sliced
1 cup wholemeal (wholewheat) self-raising flour
1/2 cup almond meal
1/4 teaspoon of cinnamon (we use 1/2 teaspoon)
1 teaspoon finely grated orange rind

Method:
Place dried fruits into a saucepan with the water. Bring to the boil, cover, and simmer for 5 minutes.

Remove 10 apricots from pan and blend these to a puree with the cooking liquid and the sliced banana. Place into a large mixing bowl.

Mix almond meal and wholemeal self-raising flour with the fruit puree and stir in all cooked fruits, cinnamon powder and grated orange rind.

Spoon mixture into prepared cake pan and bake in oven for about 40 minutes.

Allow to cool prior to unmoulding onto a wire rack.
