Pumpkin Bread
2 cups sugar
1 cup oil (salad)
3 eggs
2 cups canned pumpkin
3 cups self rising flour
1 tsp. ground cloves*
1 tsp. ground cinnamon*
1 tsp. ground nutmeg*
(* or 3 tsp. pumpkin spice)
Beat at medium speed the sugar with oil until well blended; add eggs, one at a time. Beating well after each one. Continue to beat until light and fluffy. Beat in pumpkin. Mix flour and spices together, beat in at low speed. Divide into 2 loaf pans. Bake in preheated 325 degree oven for 60 minutes.
When cooled, serve with cream cheese spread on a slice - or cool whip on a slice - delicious!
