Pumpkin Fruit Bread
2/3 cup shortening
2 2/3 cups sugar
1 can (16 oz.) pumpkin
2/3 cup water
1 medium size navel orange
3 1/2 cups flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon cloves
1/2 teaspoon baking powder
2/3 cup dried apricots or peaches
2/3 cup chopped pecans
In bowl mix shortening and sugar till creamy; blend in eggs, pumpkin and water.
Preheat oven to 350° F.
Cut up orange and grind in food processor; add to batter.
Sift together flour, baking soda, salt, cinnamon, cloves and baking powder; stir into batter, then apricots and pecans till blended.
Turn into pans or cans and bake at 350 degrees for 1 hour.
Cool in pans about 10 minutes before turning out.
Cool thoroughly before slicing or wrapping.
Per slice: 24 carbohydrates and 147 calories
