SOUR CREAM APPLE SQUARES
2 c. AP or unbleached flour
2 c. Brown sugar, firmly packed
1/2 c. Butter or margarine, softened
1 c. Chopped nuts
1 ts. Cinnamon
1 ts. Baking soda
1/2 ts. Salt
1 c. Sour cream
1 ts. Vanilla
1 Egg
2 c. Peeled apples, finely chopped
METHOD:
1. Preheat oven to 350 degrees. A 13x9" pan, ungreased, will be used.
2. In lg. bowl, combine flour, brown sugar & butter;
beat at low speed until crumbly. Stir in nuts (didn't do this;
added the drained raisins w/ the apples).
3. Press 2 3/4 cups of the crumb mixture into bottom of pan.
4. To remaining crumb mixture, add cinnamon, baking soda, salt,
sour cream, vanilla and egg; mix well. Stir in apples
(and raisins). Spoon evenly over base in pan.
5. Bake for 30-40 min. (mine took 40) or until toothpick inserted in
center comes out clean. Cut into squares; serve with whipped cream or
ice cream, if desired.
