Sweet Treat Cranberry Loaf

6 ounces cream cheese -- softened
1 egg
2 tablespoons Cointreau
1 tablespoon sugar
2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup apple juice
1/4 cup melted butter
1 egg -- beaten
1 1/2 cups fresh cranberries -- chopped
1/2 cup walnuts -- chopped


Grease and flour a 9x5x3" loaf pan; set aside.

In small bowl, beat cream cheese with electric mixer till light and fluffy. Add 1 egg, Cointreau and 1 tbsp. sugar. Beat until well combined. In a large bowl, stir together the flour, 1 cup sugar, baking powder, baking soda and salt. Stir in apple juice, butter and beaten egg. Fold in the cranberries and walnuts. Spoon half of the batter into the prepared pan. Spoon cream cheese mixture evenly over the batter. Top with remaining batter.

Bake at 350 F. for 65-75 minutes. Cool for 15 minutes in the pan on a wire rack. Remove from pan and cool on rack. When completely cool, wrap tightly in clear plastic wrap. Store in the refrigerator for up to 1 week. Or store in freezer for up to 3 months.
