ZUCCHINI - CARROT BREAD
Makes two loaves
3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup chopped pecans or walnuts
2 eggs, slightly beaten
11/2 cups granulated sugar
3/4 cup vegetable oil
1/2 cup honey
2 teaspoons vanilla extract
1 cup shredded zucchini
1 cup shredded carrots
Preheat oven to 350 degrees.
Grease and flour two 9x5x3 inch loaf pans.
Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and
nuts; set aside.
In another bowl, combine
eggs, oil, sugar, honey, and vanilla.
Add liquid mixture alternatley with zucchini and carrots to flour mixture
and mix well.
Pour into two loaf pans and bake for 65 minutes or until a toothpick
inserted in the center comes out clean.
Cool in pans for 10 minutes and remove to wire racks to cool completely.
