Zuchinni Bread
3 cups self-rising flour
3 cups sugar
2 tsp. vanilla
1-16 oz. can crushed, drained pineapple
3 eggs
1 cup vegetable oil
2 cups shredded zuchinni
1. Beat eggs lightly in a large mixing bowl. Add sugar, oil and vanilla.
2. Beat until creamy. Stir in zuchinni and pineapple.
3. Add flour, stirring only until ingredients are moistened.
4. Spoon into 2 greased and floured loaf pans.
5. Bake in 350* oven 50-55 minutes or until done.
6. Cool 10 minutes in pan.

2 tsp. baking powder
2 tsp. salt
3/4 cup walnuts
1 cup oil
2 cups shredded zuchinni
3 cups flour
1 tsp. soda
1 tsp. cinnamon
1. Beat eggs well. Stir in oil, zuchinni and vanilla.
2. Sift flour, baking powder, soda, salt and cinnamon.
3. Add to egg mixture and mix well.
4. Add walnuts and mix again.
5. Pour into 2 well-greased 9x5 loaf pans.
6. Bake in preheated oven 325* for 1 hour.
