Cinnamon Rolls

1 basic sweet roll recipe
1/4 cup butter, split in half
1/2 cup sugar
2 tsp ground cinnamon
chopped nuts for sprinkling
milk for sealing


Roll each half of basic sweet dough roll into a 12X8 inch rectangle.

In a small bowl, mix the sugar and cinnamon. Brush dough alternately with sugar melted butter and sugar mixture, using only half the butter per rectangle. Carefully roll up each piece, starting on the long end, and seal ends brushing with milk just before sealing. Slice as thick as desired using a nylon thread to slice. Place on a greased baking sheet, cover and let rise until doubled. While waiting, make confectioners icing. When doubled in size, place in a 375o oven for 18 to 20 minutes, or until golden brown. Drizzle icing over warm rolls.



Basic Sweet Roll Dough

2 cups flour
1 package dry yeast
1 cup of milk
1/4 cup of sugar
1/4 cup shortening
1 tsp salt
2 eggs
11/2 to 2 cups all purpose flour


In a large mixing bowl, combine 2 cups flour and 1 package dry yeast.

In a saucepan, heat 1 cup of milk, 1/4 cup of sugar, 1/4 cup shortening and 1 tsp salt until warm, stirring to melt the shortening. Add to the dry mixture, 2 eggs and beat at low speed for 30 seconds, scraping the bowl often. Beat for 3 minutes at high speed.

By hand, stir in 11/2 to 2 cups flour to make a moderately stiff dough. Knead on a lightly floured surface until smooth. Place the dough in a greased bowl turning to insure the dough is covered. Let rise until double. Punch down divide in half. Cover and let rest for 10 minutes.
