Ham and Cheese Breakfast Casserole

12 slices white bread, buttered
6 eggs
3 cups milk
1 teaspoon salt
dash of cayenne
8 oz. cheddar cheese, grated
1 cup diced ham or chopped bacon


Beat together eggs, milk, salt and cayenne. Trim crusts from bread and spread one side with butter or margarine. Lightly grease a 9 X 12" casserole and place 6 slices of bread, butter side down, in it. On top of bread, place ham or bacon and 1/2 of the grated cheese. Top with remaining slices of bread, butter side up. Pour over all, the milk and egg mixture. Sprinkle remaining cheese on top. refrigerate overnight (approximately 8 hrs. ). Bring to room temperature and bake at 350° for 30 to 40 minutes until golden, fluffy and the liquid is absorbed.

Serves 6.
