Casserole Ham and Potato Breakfast Casserole

Ham and Potato Breakfast Casserole:

1/2 cup chopped onion
1/2 cup chopped green pepper
2 cups chopped cooked ham
1 cup shredded cheddar cheese
12 eggs
1 cup milk
1-32oz. pkg frozen hash brown potatoes
1 tsp. salt
1/2 tsp. pepper
1/2 cup shredded cheddar cheese
parsley flakes to taste


Preheat oven to 350° F

Saute onion, and green pepper, in nonstick skillet, until golden brown.

Stir in ham and 1 cup cheese.

Beat eggs with milk in bowl.

Add hash brown potatoes, salt and pepper; mix well.

Add to ham mixture; mix well.

Spoon into 9x13 in. baking dish.

Top with 1/2 cup cheddar cheese and parsley flakes.

Bake at 350 degrees in preheated oven for 30 minutes.

You may substitute cooked bacon or sausage for ham.

Serves 10
