Casserole Scrumptous Eggs

1 1/2 lb Monterey Jack cheese;divided
1/2 lb bacon, ham or sausage
1/2 c margarine;
1 small onion;chopped
1 green pepper;chopped
3/4 lb fresh mushrooms, sliced
3 c frozen hash browns

Preheat oven to 350.

Shred cheese and spread half in 9 x 13 casserole dish. Reserve balance for top.

Saute your choice of meat; remove from skillet; wipe out the pan.

Melt some butter in skillet and saute chopped onion and green pepper for 3 minutes.

Add mushrooms and saute until onion is translucent and green pepper is tender.

Spread this over the cheese and set aside.

Beat together the following ingredients and pour over the sauteed layer in the casserole dish.

7 to 8 eggs
1 3/4 c milk
1 tbsp seasoned salt
1 tbsp dried parsley

Top with remaining cheese; cover and bake for 30 minutes COVERED and 15 minutes UNCOVERED.
