Coffee Cake: Buttermilk Coffee Cake

Buttermilk Coffee Cake

1 1/2 cups flour
2 tbsp. Saco buttermilk powder
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
3/4 cup sugar
1/4 cup soft shortening
1 egg
3/4 cup water

Topping:
1/3 cup brown sugar
1/2 tsp. cinnamon
3 tbsp. soft butter or margarine
1/4 cup flour


Preheat to 350. Grease a 9 inch square pan.

Mix all topping ingredients together and set aside.

Place cake ingredients in a mixing bowl and beat on low for 30 seconds. Scrape bowl, then mix at medium speed for 1 1/2 minutes, scraping bowl occasionally. Do not overbeat.

Spread half of the cake batter in the prepared pan. Top with half of the topping. Top with remaining batter, then remaining topping.

Bake 30 to 35 minutes or until tested done. (toothpick test)
