Orange Pecan Coffee Cake
2 3/4 cups flour, sifted
2 teaspoons baking powder
1 1/2 teaspoons salt
1 3/4 cups sugar
1 cup CriscoŽ
3/4 cup milk
1 teaspoon orange extract
1/2 teaspoon almond extract
3 eggs, unbeaten
Topping:
2 tablespoons flour
3 tablespoons brown sugar
3 tablespoons confectioners sugar
1/4 teaspoon orange extract
1/2 teaspoon orange rind
1/2 cup chopped pecans
Preheat oven to 350° F.
Sift flour. Add baking soda, salt and sugar. Cut in shortening.
Add milk, both extracts and eggs. Stir until mixed well. Set aside.
Topping: Scoop out 3/4 cup of batter and place in another bowl. Add remaining ingredients. Spread topping into bottom of a well greased tube pan.
Spoon on batter from other bowl, spreading evenly. Bake at 350 degrees for 45-60 minutes.
