Eggs: Creamed Eggs and Ham on Toast

Creamed Eggs and Ham on Toast

2 tbsp. butter/margarine
2 tbsp. flour
2 cups milk
1/4 tsp. salt (optional if ham is salty)
pepper
6 hard boiled eggs (sliced or chopped)
1/2 - 1 cup ham
dash of Tabasco (optional)
Toast — 6 or more slices


Melt butter in a saucepan on low heat, blend in flour to form a smooth paste. Gradually stir in milk and heat, stirring constantly, until thickened and smooth. (this is a basic medium white sauce, you can use your favorite recipe.) Add salt and pepper, eggs and ham and let mellow about 5 minutes stirring occasionally over lowest heat, until nicely heated through. Add a little more milk or cream if you think it's too thick.

Pour or spoon mixture on toast.

As a variation, I sometimes add a handful of cooked green peas, fresh or frozen (canned peas tend to get mushy) or grated cheddar cheese.

And if you're into fancy you can pour the mixture into puff pastry shells.

This will serve about 3.
