Feta Omelet with Bread Crumbs
5 Tbl. water
1/4 tsp. salt
4 large eggs
4 large egg whites
1 Tbl. olive oil
3/4 cup dry bread crumbs
1/2 cup crumbled feta cheese
1/4 cup thickly sliced scallions
2 Tbl. chopped fresh parsely
1 Tbl.chopped fresh or 1 tsp. dried oregano
Combine first 4 ingredients in a bowl; stir well with a whisk.
Heat oil in a 9" cast-iron skillet over medium heat. Add bread crumbs; cook for 1 minute or until lightly browned. Spread egg mixture evenly in pan; top with cheese.
In a preheated broiler, broil 15 minutes or until omelet is firm. Sprinkle with scallions, parsley and oregano. Cut into wedges.
