1 1/2 cups cooked, cubed chicken
1/4 cup milk
1/4 tsp. salt
2 tbsp. butter
1/2 cup medium salsa
Combine milk, eggs and salt. Mix well with a fork but do not beat.
In a 10 inch oven proof skillet, melt the butter. Sprinkle the chicken over the melted butter. Pour egg and milk mixture over the chicken. Spoon the salsa over the egg mixture. Cook over low heat for 6 to 8 minutes until almost set.
Broil about 6 inches from the heat source for 2 or 3 minutes until set. Cut into wedges and serve immediately.
