Spaghetti Frittata w Sausage and Tomato

1 pound sweet italian sausage
1 cup olive oil, divided
1 tablespoon chopped garlic
3 cups plum tomatoes, peeled and seeded
3/4 cup fresh basil, packed well and thinly sliced
3/4 lb spaghetti, cooked
2 1/2 cups grated parmesean cheese (not freshly grated)
8 whole eggs
1/2 cup chopped fresh parsley
salt and pepper to taste

Remove sausage from casing, cook over moderate heat, breaking into small pieces as you fry them.

Remove from pan and drain. Discard grease from pan. Heat 1/3 cup olive oil in skillet and add garlic and sausage. Cook until garlic is tender.

Add in tomatoes and basil and cook for 10 minutes.

Cook pasta until al dente and toss with tomato mixture, cheese, eggs, parsely, salt and pepper. Toss well.

Using a non stick skillet, heat 1 tablespoon oil and add in pasta mixture until it is approxmately 1 inch thick.

Spread out in pan and cook for approx. 3 minutes until golden brown.

Flip over and cook another three minutes or until golden brown.

Garnish with fresh parsley and parmesean cheese.
