Banana Pancakes
1 cup all-purpose flour
1 Tbsp. sugar
2 tsp. baking powder
1/2 tsp. cinnamon OR cardamom
1/4 tsp. salt
1 large egg
1 cup mashed ripe banana (about 2 medium sized bananas)
1/3 cup + 1 Tbsp. milk
Preheat griddle to 375 degrees.
In a medium bowl, combine first 5 ingredients.
Stir in egg, bananas and milk. Add a bit more milk if batter is too thick. Batter should be thick but still pourable.
Grease hot griddle with about 1 Tbsp. margarine. Drop batter by about 1/4 cupfuls onto hot griddle. Spread if necessary to about 1/4" thickness. When edges of pancakes appear dry and bubbles appear on top, turn and brown other side.
NOTE: no need to grease griddle between batches.
Makes about 9 pancakes.
