German Apple Pancake

2 cups sifted flour
9 eggs
2 cups milk
1 vanilla bean or extract
4 Tbl. butter
4 cups frozen Granny Smith apples
1 cup brown sugar
Dash of cinnamon
1/4 tsp. vanilla extract
4 Tbl. cornstarch
1 cup clarified butter or light oil


To make the batter, mix flour, eggs and milk. Add vanilla bean or 1/4 tsp. extract. Mix well, but the batter should still be lumpy. Let batter rest a few minutes before cooking.

To make the apple topping, first melt 4 Tbl. butter. Add apples. Tip: use the frozen Granny Smith apples that are already peeled and sliced. They stay firmer when cooking. Add the brown sugar and let it melt. Add cinnamon and 1/4 tsp. vanilla extract.

Mix the cornstarch with 6 Tbl. cold water to make a slurry. Add the slurry to the pan. Keep warm.

Place an oven safe skillet or pan in a 400 degree oven. Carefully remove the pan once it's hot. Coat with clarified butter or oil. Spoon in 6 oz. of the batter. Return to the oven for 6-10 minutes until the batter is brown and the sides are puffed up. Repeat process.

Top each pancake with apples. You can garnish with strawberries, whipped cream and powdered sugar. Serves 6.
