German Pancake

6 eggs
1 cup milk
1 cup flour
1/2 tsp. salt
2 tbsp. butter, melted

Buttermilk syrup:
1 1/2 cups sugar
3/4 cup buttermilk
1/2 cup butter
2 tbsp. corn syrup
1 tsp.baking soda
2 tsp. vanilla
Powdered sugar


Preheat oven to 400 degrees F. In a blender, combine eggs, milk, flour and salt. Blend until smooth. Pour the melted butter into an ungreased 9 x 13 pan and spread around. Pour batter on top of butter. Bake, uncovered, at 400 for 20 minutes.

While the pancake bakes, combine the buttermilk syrup ingredients in a large saucepan. Bring to a boil and boil for 7 minutes, stirring constantly. Remove from heat and add vanilla.

Dust pancake with powdered sugar and serve hot with syrup.

8 servings. Makes about 2 cups syrup.

Notes: Syrup is very, very rich. Can use honey in place of the corn syrup in the buttermilk syrup.
The syrup rises a lot while it boils, so use a large pan.
