Pancakes Old Fashioned Sourdough Started Pancakes

OLD-FASHIONED PANCAKES

1/2 cup sourdough starter
1-3/4 cups unbleached white flour
1 cup undiluted evaporated milk
1 cup water
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sugar

Combine first four ingredients in large bowl, then cover loosely.

Let stand in warm place for at least 8 hours.

Beat other ingredients together.

Gently stir into batter by hand, using a wooden spoon.

Bake pancakes on lightly greased griddle. Turn when bubbles appear. Pancakes will be quite fat, fluffy, and tender. (For thinner pancakes, add a little more water with the egg mixture.)

For waffles, stir in 2 to 3 tablespoons of cooking oil or melted butter after all other ingredients have been combined, then bake on lightly greased waffle iron.
