STRAWBERRY PUFF PANCAKE
1/4 cup butter
1 1/2 cups milk
1/2 cup sugar; divided
3/4 cup unsifted all-purpose flour
1/4 tsp. salt
3 cups strawberries, halved
Put butter in a 9-inch ovenproof frying pan or other baking dish.
Place dish in a 425 deg. oven until butter melts and bubbles, about 10 minutes.
Meanwhile, beat together the eggs, milk, 6 Tbls. sugar, flour, salt until smooth.
Remove pan from oven and immediately pour mix into the hot pan all at once.
Return pan to oven and bake 425 for 30 minutes or until edges are puffed and browned.
Combine strawberries with remaining 2 Tbl. sugar.
When pancake is done, remove from oven and immediately spoon strawberries into the center.
Cut into wedges and pass sour cream and brown sugar.
Serves 3 to 4.
